Christmas is just about 4 days away, and many households have already started their Christmas cooking fiesta this weekend. Cookies are always on everyone’s menu. There are a good number of varieties and recipes available all over the Internet. And, it is particulary not much of a hassle for the ones who don’t really mind eating anything. But, baking cookies for Vegans can be difficult considering their diet restrictions. They do not eat any non-vegetarian food items, and also avoid milk and milk products in many cases.

Delicious Choco Chip Cranberry Cookies
This recipe has the classic cocoa taste without having you to miss out on the goodness of one of the healthiest fruits – the cranberries!
This particular recipe includes ingredients quantity to make about 20 cookies.
Preparation time: 10 minutes
Cooking time: 15 minutes
Total Time Needed: 25 minutes
Ingredients will include:
- Half a cup almond milk
- Half a cup olive oil
- 1 cup of dried cranberries
- 1 cup of all-purpose flour
- 1 cup of milk free choco-chips
- Quarter cup vanilla
- 3/4th cup of wheat flour
- Quarter cup of water
- 3 table spoons of egg-replacer
- 1 teaspoon of baking soda
- Half a tea spoon of salt
- 1 and 3/4th cup of brown sugar
Step 1: The oven must be pre-heated to 375F. Grease a big baking sheet with oil lightly. Mix in a small cup, the egg replacer and warm water until it gets a gooey consistency, and set it aside.
Step 2: In a slightly larger mixing bowl, mix the salt, baking soda, brown sugar and both the flours together. In another smaller bowl mix vanilla, almond milk and olive oil together. Now, add the wet ingredients to the dry, and mix well. Put in the cranberries and chocolate chips.
Step 3: Make sure you drop the dough, just 2 tablespoons at a time on the baking sheet. Bake for about 12 to 15 minutes, till the edges turn brown. Allow the cookies to cool for about 5 minutes on the baking sheet before you transfer them elsewhere for cooling completely. And, that’s how you can make yummy homemade cookies in a nutshell.
These cookies are healthier than their traditional counterparts that contain eggs and butter, yet they are as delicious as the other cookies. They are also low on fat content, therefore great even for people who are on a diet!
